Purpose. The purpose of the study is to analyze the basics of current legislation in the field of production of therapeutic and prophylactic products from local raw materials and to determine the legal mechanisms for improving the basic principles of positive law in the practical plane of the production process. Methodology. In order to achieve this goal, a comprehensive analysis of the available information on the analyzed problem was conducted and conclusions and proposals were formed on their basis. The following methods of scientific cognition were used during the research: dialectical, system-structural, terminological, system-functional, historical, normative-dogmatic, generalization method. Results. As a result of the conducted researches the treatment-and-prophylactic properties of inulin are established, and also the analysis of modern technological methods of its production is carried out. Scientific novelty. For the first time, the levels of legal regulation in the field of inulin production and use have been systematized and generalized, in particular in the context of using this product as a raw material for functional food production to strengthen the immune system and effectively combat various diseases. Practical significance. The results of research can be used in law-making and human rights activities on the organization of production and use of inulin for the preparation of functional foods and in medical practice.
